- 1 medium cucumber, sliced
- 2 medium carrots, shredded
- 1 medium bell pepper (red or orange), diced
- 1 tablespoon sesame seeds
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- Freshly ground black pepper, to taste
Instructions
- In a large bowl, combine mixed greens, sliced cucumber, shredded carrots, and diced bell peppers. Wash and dry greens well to ensure the dressing sticks.
- In a separate bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, minced garlic, and black pepper until smooth.
- Pour the dressing over the salad and toss gently to coat. Avoid tossing too much to keep the greens from becoming soggy.
- Sprinkle sesame seeds on top before serving.
