Description

Delicious no-bake protein balls capturing the flavors of Samoa cookies with a blend of coconut, chocolate, and nut butter.


Ingredients

Scale
  • 1 cup oats
  • 1/2 cup protein powder
  • 1/4 cup almond flour
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup shredded coconut
  • 1/4 cup chocolate chips
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine the oats, protein powder, almond flour, and salt. Stir to blend dry ingredients evenly.
  2. In another bowl, whisk the peanut butter or almond butter, honey or maple syrup, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until well combined.
  4. Fold in the shredded coconut and chocolate chips.
  5. Use your hands to roll the mixture into 12 small balls.
  6. Place on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.

Notes

Store in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months.
