- 1 pound sausage (Italian or smoked)
- 4 medium potatoes, diced
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the sausage to the skillet and cook until browned, about 5-7 minutes.
- Remove the sausage from the skillet and set aside. In the same skillet, add the diced potatoes, bell pepper, and onion. Season with salt and pepper. Cook, stirring occasionally, until the potatoes are tender and golden brown, about 15-20 minutes.
- Stir in the garlic and cook for another minute until fragrant. Then, add the sausage back into the skillet and mix everything together. Cook for an additional 2 minutes to heat it through.
- Garnish with fresh parsley if desired, and serve hot.
Notes
Use high-quality sausage for best results. You can add other vegetables or cheese on top for variations.
