- 4 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 6 sausage links
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- Cooking spray or oil
Instructions
- Crack the eggs into a bowl, add milk, salt, and pepper, then whisk until combined. Lay out tortillas and prepare the shredded cheese.
- Heat a skillet over medium heat, cook sausage links until browned (about 8-10 minutes), then remove and slice into bite-sized pieces.
- Add oil or cooking spray to the skillet, pour in the egg mixture, and scramble over medium-low heat for 2-3 minutes until set. Remove from heat and layer onto tortillas with sausage and cheese.
- Roll tortillas tightly, seal seam-side down in a heated skillet with oil, browning on all sides for 1-2 minutes. Serve warm.
