Description

Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 6 sausage links
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • Cooking spray or oil

Instructions

  1. Crack the eggs into a bowl, add milk, salt, and pepper, then whisk until combined. Lay out tortillas and prepare the shredded cheese.
  2. Heat a skillet over medium heat, cook sausage links until browned (about 8-10 minutes), then remove and slice into bite-sized pieces.
  3. Add oil or cooking spray to the skillet, pour in the egg mixture, and scramble over medium-low heat for 2-3 minutes until set. Remove from heat and layer onto tortillas with sausage and cheese.
  4. Roll tortillas tightly, seal seam-side down in a heated skillet with oil, browning on all sides for 1-2 minutes. Serve warm.
