Description

A quick, comforting weeknight meal with tortellini, roasted broccoli, burst cherry tomatoes, and melted cheese.


Ingredients

Scale
  • 1 package of tortellini (fresh or frozen)
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper or lightly oil it.
  2. Toss the broccoli, cherry tomatoes, and tortellini with olive oil, minced garlic, salt, pepper, and Italian seasoning in a large bowl.
  3. Spread the mixture evenly on a sheet pan in a single layer. Bake for 15-20 minutes or until the broccoli is tender and the tortellini is slightly golden.
  4. Remove from the oven, sprinkle mozzarella and Parmesan cheese on top, and bake for an additional 5 minutes until melted and bubbly. Serve hot.

Notes

Add a squeeze of lemon before serving for extra brightness. Perfect with a simple green salad.
