Ingredients

  • 1 can butter beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions

  1. Heat a drizzle of olive oil over medium heat in a large pot. Add the chopped onion and minced garlic to the pot.
  2. Sauté the onions and garlic until they become soft and fragrant, about 3-4 minutes.
  3. Stir in the diced tomatoes (with their juices), butter beans, vegetable broth, dried oregano, smoked paprika, salt, and pepper. Mix until all ingredients are well combined.
