Instructions
- Heat a drizzle of olive oil over medium heat in a large pot. Add the chopped onion and minced garlic to the pot.
- Sauté the onions and garlic until they become soft and fragrant, about 3-4 minutes.
- Stir in the diced tomatoes (with their juices), butter beans, vegetable broth, dried oregano, smoked paprika, salt, and pepper. Mix until all ingredients are well combined.
