Ingredients

- 1 cup red beans (dried)
- 1 cup rice
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped green onions for garnish (optional)
Instructions
- Soak the red beans in water overnight. This will help them cook faster and become tender. After soaking, drain and rinse the beans under cold water.
- In a pot, heat two tablespoons of olive oil over medium heat. Add the chopped onion, minced garlic, and bell pepper. Sauté them until they soften, which usually takes about 5 minutes.
- Add the soaked red beans to the pot, then pour in the 4 cups of water. Stir in the cumin, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1.5 to 2 hours until the beans are tender.
- During the last 15-20 minutes of cooking time, cook the rice according to package instructions. Once the beans are tender, serve over rice and garnish with green onions if desired.
