Description

A delightful twist on classic Sloppy Joes, this casserole combines bold flavors with satisfying textures, making it perfect for weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (15 oz) Sloppy Joe sauce
  • 2 cups frozen corn
  • 2 cups tater tots
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef, chopped onion, and bell pepper over medium heat until the meat is browned and the vegetables are soft. Drain excess fat.
  3. Stir in the Sloppy Joe sauce and frozen corn into the beef mixture and let it simmer for a few minutes.
  4. Transfer the mixture into a greased casserole dish. Top it evenly with tater tots and bake for 25-30 minutes until golden brown.
  5. Remove from oven, sprinkle shredded cheddar cheese on top, and return to oven for an additional 5 minutes or until cheese melts.

Notes

Leftover casserole can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Can be made ahead of time and baked when ready.
