- 1.5 lbs chicken thighs or breast, cut into chunks
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 tablespoon ginger, minced
- 4 cloves garlic, minced
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 cup chicken broth
- 2 cups fresh basil leaves
- Salt and pepper to taste
- Rice or naan for serving
Instructions
- In a slow cooker, combine the chicken, coconut milk, curry powder, ginger, garlic, onion, red bell pepper, and chicken broth. Stir to combine all the ingredients thoroughly.
- Season the mixture with salt and pepper to taste.
- Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender and fully cooked.
- Stir in the fresh basil leaves just before serving. Serve hot over rice or with warm naan.
Notes
For a spicier kick, add a diced red chili or a splash of hot sauce. Substitute chicken with shrimp or tofu, adjusting cooking time accordingly. For thicker sauce, add cornstarch mixed with water towards the end.
