Description

Ingredients

  • 1.5 lbs chicken thighs or breast, cut into chunks
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup chicken broth
  • 2 cups fresh basil leaves
  • Salt and pepper to taste
  • Rice or naan for serving

Instructions

  1. In a slow cooker, combine the chicken, coconut milk, curry powder, ginger, garlic, onion, red bell pepper, and chicken broth. Stir to combine all the ingredients thoroughly.
  2. Season the mixture with salt and pepper to taste.
  3. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender and fully cooked.
  4. Stir in the fresh basil leaves just before serving. Serve hot over rice or with warm naan.

Notes

For a spicier kick, add a diced red chili or a splash of hot sauce. Substitute chicken with shrimp or tofu, adjusting cooking time accordingly. For thicker sauce, add cornstarch mixed with water towards the end.
