This cozy meal features tender beef in a rich garlic butter sauce with creamy potatoes, perfect for a hands-off dinner.

- 2 lbs beef chuck roast
- 4 medium potatoes, diced
- 4 cloves garlic, minced
- 1/2 cup unsalted butter (about 113 g)
- 1 cup beef broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 sprigs fresh rosemary (optional)
Instructions
- Place the diced potatoes in the bottom of the slow cooker in an even layer. Pat the beef dry with paper towels and season all sides with salt, black pepper, garlic powder, and onion powder.
- In a small microwave-safe bowl or saucepan, melt the unsalted butter. Stir in the minced garlic until evenly mixed. Spoon or pour this garlic butter evenly over the seasoned beef so the flavors soak into the meat.
- Place the seasoned beef on top of the potatoes in the slow cooker. Pour the beef broth around the meat (not directly washing off the butter) and lay the rosemary sprigs on top if using. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is tender and pulls apart easily.
- Remove the rosemary sprigs and transfer the beef to a cutting board. Let it rest briefly, then slice or shred the beef. Stir the potatoes and spoon the garlic butter sauce from the slow cooker over the beef and potatoes. If you want a thicker sauce, remove a cup of the cooking liquid, mix with 1 tablespoon cornstarch, and stir it back in, cooking on high for 10–15 minutes until thickened.
Notes
For deeper flavor, sear the seasoned roast in a hot skillet for 2–3 minutes per side before adding to the slow cooker.
