Description

This Snickerdoodle Banana Bread blends the warm cinnamon-sugar kiss of a snickerdoodle cookie with moist, banana-sweet loaf bread, perfect for breakfast, snacks, or dessert.


Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan. Mash the ripe bananas in a mixing bowl with a fork until mostly smooth with a few small lumps remaining.
  2. Stir the melted butter into the mashed bananas. Mix in the sugar, then beat in the egg and vanilla extract until blended. Sprinkle the baking soda and a pinch of salt over the mixture and stir to combine. Gradually add the all-purpose flour and mix gently until just combined — avoid overmixing to keep the loaf tender.
  3. In a small bowl, combine the 2 tablespoons of sugar with the 1 teaspoon of cinnamon to make the cinnamon-sugar topping. Pour half of the batter into the prepared loaf pan and sprinkle half of the cinnamon-sugar mixture over it. Spoon the remaining batter on top, smoothing it gently, and finish by sprinkling the remaining cinnamon-sugar evenly across the top. Bake in the preheated oven for 60–65 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  4. Let the loaf cool in the pan for a few minutes (about 10 minutes) to set, then transfer it to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Store at room temperature for up to 2 days or refrigerate in an airtight container for up to 5 days. This recipe also freezes well.
