Description
A warm, crisp flatbread topped with garlicky wilted spinach and tangy crumbles of feta, this Spinach Feta Flatbread Pizza is quick to prepare and comforting to eat.
Ingredients
- Flatbread or pizza dough
- Fresh spinach
- Feta cheese
- Olive oil
- Garlic
- Salt
- Pepper
- Red pepper flakes (optional)
- Cherry tomatoes (optional)
Instructions
- Preheat the oven to 400°F (200°C). If using pizza dough, roll it out on a lightly floured surface. If using store-bought flatbread, place it on a baking sheet. Mince 2–3 garlic cloves and halve a handful of cherry tomatoes if using. Crumble the feta so it’s ready to sprinkle.
- Heat about 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 30–60 seconds until fragrant and slightly golden. Add the fresh spinach in batches and toss until wilted. Season with salt and pepper.
- Spread the sautéed spinach evenly over the flatbread or dough, leaving a small border around the edges. Crumble the feta cheese over the spinach. Scatter halved cherry tomatoes on top if desired, and sprinkle red pepper flakes for heat. Bake for 10–15 minutes until the edges are golden and cheese is slightly browned.
- Remove from the oven and let it rest for a minute or two. Slice into pieces and serve warm, possibly finishing with a drizzle of olive oil or fresh black pepper.
Notes
To avoid a soggy crust, be sure to squeeze excess liquid from the wilted spinach. You can also use room-temperature feta for better melting.
