- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 2 medium potatoes, diced
- 4 large eggs
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: diced onion and garlic
Instructions
- Heat the olive oil in a skillet over medium heat. If using, dice the onion and mince the garlic. Wash and dry the spinach. Crack the eggs into a bowl and beat with a fork, seasoning with salt and pepper.
- Toss the diced potatoes (and onion/garlic if using) to ensure even cooking.
- Add the potatoes to the hot skillet. Cook, stirring occasionally, until tender and golden (about 10–15 minutes). Stir in spinach and cook until wilted (about 1–2 minutes). Pour the beaten eggs into the skillet, stirring gently until the eggs set but remain moist.
- Remove from heat and sprinkle crumbled feta over the scramble, folding it in gently. Adjust salt and pepper to taste and serve hot.
