- 2 pounds potatoes, diced
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 cup cooked bacon, crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Boil the diced potatoes in a large pot of salted water until tender, about 10–15 minutes. Drain well and spread to cool slightly.
- In a bowl, mix together the sour cream, mayonnaise, and Dijon mustard until smooth and well combined. Season with salt and pepper.
- Add the cooled potatoes to the dressing and fold gently to coat without breaking the cubes.
- Stir in the crumbled bacon, shredded cheddar, and chopped green onions. Chill in the refrigerator for at least 1 hour before serving.
Notes
For a lighter option, substitute half the sour cream with plain Greek yogurt and use light mayonnaise. Adjust seasoning with additional Dijon or lemon juice if desired.
