- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups fresh strawberries, sliced
- 1/2 cup powdered sugar (for frosting)
- 1 cup heavy whipping cream (for frosting)
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract. In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add the dry mixture to the creamed mixture, alternating with the milk until smooth. Gently fold in the sliced strawberries.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the frosting, whip heavy cream with powdered sugar and vanilla until soft peaks form. Spread between the cake layers and on top once cooled.
- Garnish with additional fresh strawberries, if desired.
Notes
Fresh strawberries yield the best flavor. If using slightly overripe strawberries, they may still work in the recipe.
