Description

A delightful strawberry cake that combines soft, moist layers with luscious frosting, perfect for summer gatherings or special occasions.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, sliced
  • 1/2 cup powdered sugar (for frosting)
  • 1 cup heavy whipping cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract. In a separate bowl, combine the flour, baking powder, and salt.
  4. Gradually add the dry mixture to the creamed mixture, alternating with the milk until smooth. Gently fold in the sliced strawberries.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. For the frosting, whip heavy cream with powdered sugar and vanilla until soft peaks form. Spread between the cake layers and on top once cooled.
  8. Garnish with additional fresh strawberries, if desired.

Notes

Fresh strawberries yield the best flavor. If using slightly overripe strawberries, they may still work in the recipe.
