Description
Creamy cheesecake layered with fresh strawberries on a buttery graham crust, topped with a beautiful strawberry jam swirl.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup strawberry jam
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until evenly moistened. Press into the bottom of the prepared dish.
- Beat cream cheese until smooth and lump-free, then gradually add 1 cup sugar, vanilla extract, and eggs one at a time, mixing well.
- Pour the cream cheese mixture over the crust and spread it evenly. Top with sliced strawberries and dollops of strawberry jam, swirling if desired.
- Bake for 30–35 minutes, until edges are set and center is slightly jiggly. Allow to cool at room temperature, then chill for at least 4 hours.
- Once chilled, lift the bars out using the parchment overhang and slice into 12 bars.
Notes
For clean slices, chill well and use a sharp knife dipped in hot water. Store in an airtight container for up to 4 days.
