Description

A simple, sweet cake featuring swirls of cinnamon-brown-sugar, fresh strawberries, and a silky powdered-sugar icing. Perfect for brunch or dessert.


Ingredients

  • 1 box of yellow cake mix
  • 4 eggs
  • 1 cup of sour cream
  • 1/2 cup of vegetable oil
  • 1 cup of strawberries, chopped
  • 1/2 cup of brown sugar
  • 1 teaspoon of cinnamon
  • 1/2 cup of powdered sugar
  • 2 tablespoons of milk
  • 1 teaspoon of vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch pan and set aside.
  2. In a large bowl, mix together the yellow cake mix, eggs, sour cream, and vegetable oil until well blended.
  3. In a separate bowl, combine the brown sugar and cinnamon.
  4. Pour half of the batter into the prepared pan, sprinkle with half of the brown sugar mixture and half of the strawberries. Top with the remaining batter, followed by the rest of the brown sugar mixture and strawberries. Swirl gently with a knife.
  5. Bake for 30-35 minutes, or until a toothpick comes out clean. Let cool slightly.
  6. For the icing, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled cake.
  7. Serve slightly warm or at room temperature.

Notes

Use ripe strawberries and avoid overmixing the batter for the best texture. Serve with whipped cream or vanilla ice cream for extra delight.
