Instructions
- In a mixing bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth.
- Gently fold in the whipped cream and pureed strawberries until fully combined.
- Chill the mixture in the refrigerator for about 30 minutes to firm up.
- Once chilled, scoop out small portions of the mixture and roll them into balls.
- Roll each ball in graham cracker crumbs until fully coated.
- Dip each truffle in melted chocolate to coat and place them on a parchment-lined tray.
- Chill in the refrigerator until set, about 30 minutes.
- Garnish with fresh strawberries before serving.
