Ingredients

  • 1 whole beef tenderloin
  • 8 oz. spinach, wilted
  • 4 oz. cream cheese, softened
  • 1 cup mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Olive oil
  • Kitchen twine

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a pan, heat a drizzle of olive oil over medium heat. Add the minced garlic and finely chopped mushrooms. Sauté until softened and fragrant, about 5 minutes.
  3. In a large bowl, combine the wilted spinach, softened cream cheese, sautéed mushrooms, breadcrumbs, salt, and black pepper. Mix well until creamy.
  4. Carefully cut a pocket into the beef tenderloin and stuff it with the filling. Secure with kitchen twine.
  5. Rub the outside of the tenderloin with olive oil, salt, and black pepper.
  6. In a hot skillet, sear the tenderloin on all sides until browned, about 2-3 minutes per side.
  7. Transfer to the preheated oven and roast for 25-30 minutes.
  8. Let the tenderloin rest for 10 minutes before slicing.

Notes

Use high-quality beef for the best flavor. You can prepare the filling in advance and store it in the refrigerator.
