- 1 whole beef tenderloin
- 8 oz. spinach, wilted
- 4 oz. cream cheese, softened
- 1 cup mushrooms, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- Olive oil
- Kitchen twine
Instructions
- Preheat the oven to 400°F (200°C).
- In a pan, heat a drizzle of olive oil over medium heat. Add the minced garlic and finely chopped mushrooms. Sauté until softened and fragrant, about 5 minutes.
- In a large bowl, combine the wilted spinach, softened cream cheese, sautéed mushrooms, breadcrumbs, salt, and black pepper. Mix well until creamy.
- Carefully cut a pocket into the beef tenderloin and stuff it with the filling. Secure with kitchen twine.
- Rub the outside of the tenderloin with olive oil, salt, and black pepper.
- In a hot skillet, sear the tenderloin on all sides until browned, about 2-3 minutes per side.
- Transfer to the preheated oven and roast for 25-30 minutes.
- Let the tenderloin rest for 10 minutes before slicing.

Use high-quality beef for the best flavor. You can prepare the filling in advance and store it in the refrigerator.
