Description

A hearty dish combining ground beef, spinach, bacon, and cheese stuffed in roasted butternut squash, perfect for family dinners or gatherings.


Ingredients

  • 1 medium butternut squash
  • 1 cup cooked ground beef
  • 1 cup fresh spinach, chopped
  • 1 cup cooked bacon, crumbled
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop out the seeds.
  2. Drizzle the insides of the squash with olive oil and season with salt, pepper, garlic powder, and onion powder.
  3. Place the squash halves cut-side down on a baking sheet and roast for about 30-40 minutes, until tender.
  4. While the squash roasts, heat a skillet over medium heat, and combine the cooked ground beef, spinach, crumbled bacon, and half of the shredded cheese.
  5. Flip the roasted squash halves over and fill each with the beef mixture.
  6. Sprinkle the remaining cheese over the stuffed squash.
  7. Return the stuffed squash to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.
  8. Allow to cool slightly before serving hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 20 minutes.
