Description
A hearty dish combining ground beef, spinach, bacon, and cheese stuffed in roasted butternut squash, perfect for family dinners or gatherings.

- 1 medium butternut squash
- 1 cup cooked ground beef
- 1 cup fresh spinach, chopped
- 1 cup cooked bacon, crumbled
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop out the seeds.
- Drizzle the insides of the squash with olive oil and season with salt, pepper, garlic powder, and onion powder.
- Place the squash halves cut-side down on a baking sheet and roast for about 30-40 minutes, until tender.
- While the squash roasts, heat a skillet over medium heat, and combine the cooked ground beef, spinach, crumbled bacon, and half of the shredded cheese.
- Flip the roasted squash halves over and fill each with the beef mixture.
- Sprinkle the remaining cheese over the stuffed squash.
- Return the stuffed squash to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.
- Allow to cool slightly before serving hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 20 minutes.
