- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 garlic cloves, minced
- Salt and pepper to taste
- 8 oz mozzarella cheese (for stuffing)
- 1 cup Guinness beer
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 onion, chopped
- 2 tablespoons flour
- 2 tablespoons olive oil
Instructions
- In a bowl, mix ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, and a pinch of salt and pepper. Combine all ingredients thoroughly until evenly mixed.
- Form the mixture into meatballs, about the size of a golf ball, and press a piece of mozzarella cheese into the center of each meatball, sealing it carefully.
- In a skillet, heat olive oil over medium heat. Add the meatballs and brown them on all sides until they have a nice golden crust. Remove the meatballs and set them aside.
- In the same skillet, add the chopped onion and cook until soft and translucent. Sprinkle flour over the onions and cook for an additional minute. Gradually stir in the Guinness beer and beef broth, then add Worcestershire sauce. Return the meatballs to the skillet, cover, and let them simmer for 30 minutes.
Notes
Serve these meatballs over creamy mashed potatoes or alongside buttered noodles. They can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
