- 4 bell peppers
- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Shredded cheese for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat, add onion and garlic, and sauté until softened, about 3-5 minutes.
- Add ground meat to the skillet and cook until browned, about 6-8 minutes.
- Stir in cooked rice, diced tomatoes, Italian seasoning, and salt and pepper. Mix well and simmer for a few minutes.
- Spoon the mixture into each bell pepper, packing gently. Place them upright in a baking dish.
- Cover the dish with foil and bake for 25-30 minutes.
- Remove foil, top with cheese if desired, and bake for an additional 10 minutes until cheese is melted and peppers are tender.
Notes
Stuffed peppers are customizable; try different meats or add vegetables. Store leftovers in an airtight container for up to 4 days or freeze for 3 months.
