Description

Stuffed peppers filled with ground meat, rice, and spices, offering a hearty and colorful meal.


Ingredients

  • 4 bell peppers
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Shredded cheese for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. In a skillet, heat olive oil over medium heat, add onion and garlic, and sauté until softened, about 3-5 minutes.
  3. Add ground meat to the skillet and cook until browned, about 6-8 minutes.
  4. Stir in cooked rice, diced tomatoes, Italian seasoning, and salt and pepper. Mix well and simmer for a few minutes.
  5. Spoon the mixture into each bell pepper, packing gently. Place them upright in a baking dish.
  6. Cover the dish with foil and bake for 25-30 minutes.
  7. Remove foil, top with cheese if desired, and bake for an additional 10 minutes until cheese is melted and peppers are tender.

Notes

Stuffed peppers are customizable; try different meats or add vegetables. Store leftovers in an airtight container for up to 4 days or freeze for 3 months.
