- 1 pork tenderloin
- 1 cup apples, diced
- 1/2 cup breadcrumbs
- 1/4 cup walnuts, chopped
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup bourbon
- 1 cup apple cider
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the diced apples, breadcrumbs, walnuts, cinnamon, nutmeg, salt, and pepper until well combined.
- Cut a slit down the center of the pork tenderloin and stuff it with the apple mixture. Secure with kitchen twine.
- In an oven-safe skillet, heat olive oil over medium-high heat and sear the stuffed tenderloin on all sides until browned.
- Remove the tenderloin and pour in the bourbon, scraping up any browned bits. Add apple cider and bring to a simmer.
- Return the stuffed tenderloin to the skillet and roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
- Let the tenderloin rest for 5-10 minutes before slicing.
- Add heavy cream to the skillet, stirring to combine with the bourbon mixture, and simmer until thickened.
- Slice the pork tenderloin and serve with the apple bourbon gravy drizzled over the top.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Reheat in the microwave or skillet with a splash of apple cider.
