Description

A delightful dish that combines savory pork with sweet apples and a splash of bourbon for a warm, rich flavor.


Ingredients

  • 1 pork tenderloin
  • 1 cup apples, diced
  • 1/2 cup breadcrumbs
  • 1/4 cup walnuts, chopped
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup bourbon
  • 1 cup apple cider
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the diced apples, breadcrumbs, walnuts, cinnamon, nutmeg, salt, and pepper until well combined.
  3. Cut a slit down the center of the pork tenderloin and stuff it with the apple mixture. Secure with kitchen twine.
  4. In an oven-safe skillet, heat olive oil over medium-high heat and sear the stuffed tenderloin on all sides until browned.
  5. Remove the tenderloin and pour in the bourbon, scraping up any browned bits. Add apple cider and bring to a simmer.
  6. Return the stuffed tenderloin to the skillet and roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  7. Let the tenderloin rest for 5-10 minutes before slicing.
  8. Add heavy cream to the skillet, stirring to combine with the bourbon mixture, and simmer until thickened.
  9. Slice the pork tenderloin and serve with the apple bourbon gravy drizzled over the top.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat in the microwave or skillet with a splash of apple cider.
