Description
A sweet, buttery corn casserole with a warm honey glaze, topped golden and soft with pops of corn and a tender crumb.

- 2 cups corn kernels
- 1 cup creamed corn
- 1/2 cup honey
- 1/2 cup milk
- 2 eggs
- 1 cup cornmeal
- 1/2 cup diced onion
- 1 teaspoon baking powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a casserole dish (about 8×8 or similar).
- In a large bowl, whisk together corn kernels, creamed corn, honey, milk, and eggs until smooth.
- In another bowl, stir cornmeal, diced onion, baking powder, salt, and pepper. Gradually fold the dry mix into the wet ingredients until combined but don’t overmix.
- Pour the mixture into the greased casserole dish and smooth the top.
- Bake at 350°F (175°C) for 45–50 minutes until the top is golden brown and a toothpick inserted near the center comes out mostly clean.
- If using shredded cheese, sprinkle it over the casserole during the last 10 minutes of baking.
- Remove from oven and let cool for 10 minutes before slicing.
Notes
For a brunch twist, top slices with a fried egg and hot sauce. Garnish as desired.
