Description

A sweet, buttery corn casserole with a warm honey glaze, topped golden and soft with pops of corn and a tender crumb.


Ingredients

Scale
  • 2 cups corn kernels
  • 1 cup creamed corn
  • 1/2 cup honey
  • 1/2 cup milk
  • 2 eggs
  • 1 cup cornmeal
  • 1/2 cup diced onion
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a casserole dish (about 8×8 or similar).
  2. In a large bowl, whisk together corn kernels, creamed corn, honey, milk, and eggs until smooth.
  3. In another bowl, stir cornmeal, diced onion, baking powder, salt, and pepper. Gradually fold the dry mix into the wet ingredients until combined but don’t overmix.
  4. Pour the mixture into the greased casserole dish and smooth the top.
  5. Bake at 350°F (175°C) for 45–50 minutes until the top is golden brown and a toothpick inserted near the center comes out mostly clean.
  6. If using shredded cheese, sprinkle it over the casserole during the last 10 minutes of baking.
  7. Remove from oven and let cool for 10 minutes before slicing.

Notes

For a brunch twist, top slices with a fried egg and hot sauce. Garnish as desired.
