Description

An easy and colorful side dish featuring tender sweet potatoes and crisp green beans, roasted with simple spices and rosemary.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 2 cups green beans, trimmed
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon fresh rosemary, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Peel and cube the sweet potatoes, trimming them into even 1/2- to 3/4-inch pieces.
  2. In a large mixing bowl, combine sweet potatoes and green beans. Drizzle with olive oil and sprinkle with salt, black pepper, garlic powder, paprika, and optional rosemary. Toss to coat.
  3. Spread the mixture evenly on a large baking sheet. Roast in the preheated oven for 25–30 minutes until sweet potatoes are tender and lightly browned, tossing halfway through.
  4. Remove the tray from the oven and let it rest for 2–3 minutes. Taste and adjust seasoning as needed, then serve hot as a side dish.

Notes

For added flavor, crumbled feta or toasted nuts can be sprinkled on top before serving.
