An easy and colorful side dish featuring tender sweet potatoes and crisp green beans, roasted with simple spices and rosemary.

- 2 medium sweet potatoes, peeled and cubed
- 2 cups green beans, trimmed
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 tablespoon fresh rosemary, chopped (optional)
Instructions
- Preheat the oven to 400°F (200°C). Peel and cube the sweet potatoes, trimming them into even 1/2- to 3/4-inch pieces.
- In a large mixing bowl, combine sweet potatoes and green beans. Drizzle with olive oil and sprinkle with salt, black pepper, garlic powder, paprika, and optional rosemary. Toss to coat.
- Spread the mixture evenly on a large baking sheet. Roast in the preheated oven for 25–30 minutes until sweet potatoes are tender and lightly browned, tossing halfway through.
- Remove the tray from the oven and let it rest for 2–3 minutes. Taste and adjust seasoning as needed, then serve hot as a side dish.
Notes
For added flavor, crumbled feta or toasted nuts can be sprinkled on top before serving.
