Description

Crispy, cheesy sweet potato skins make for a delicious and healthy snack that can easily be customized with toppings.


Ingredients

Scale
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup cooked bacon bits (optional)
  • 1/4 cup sour cream or Greek yogurt
  • Chives or green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and pierce the sweet potatoes with a fork to allow steam to escape during baking.
  2. Bake the sweet potatoes for about 45 minutes, or until they are fork-tender.
  3. Let the baked sweet potatoes cool for a few minutes, then cut them in half lengthwise. Carefully scoop out some of the flesh, leaving some sweet potato in the skin.
  4. Brush the insides of the sweet potato skins with olive oil and season generously with salt and pepper. Place them cut-side down on a baking sheet.
  5. Fill each sweet potato skin with shredded cheese and sprinkle with bacon bits if using.
  6. Bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  7. Serve hot, topped with a dollop of sour cream or Greek yogurt and garnished with chives or green onions.

Notes

For crisper skins, bake them cut-side down initially. Customize with toppings to suit your taste!
