Description
Crispy, cheesy sweet potato skins make for a delicious and healthy snack that can easily be customized with toppings.
Ingredients

- 2 medium sweet potatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/4 cup cooked bacon bits (optional)
- 1/4 cup sour cream or Greek yogurt
- Chives or green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C). Wash and pierce the sweet potatoes with a fork to allow steam to escape during baking.
- Bake the sweet potatoes for about 45 minutes, or until they are fork-tender.
- Let the baked sweet potatoes cool for a few minutes, then cut them in half lengthwise. Carefully scoop out some of the flesh, leaving some sweet potato in the skin.
- Brush the insides of the sweet potato skins with olive oil and season generously with salt and pepper. Place them cut-side down on a baking sheet.
- Fill each sweet potato skin with shredded cheese and sprinkle with bacon bits if using.
- Bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Serve hot, topped with a dollop of sour cream or Greek yogurt and garnished with chives or green onions.
Notes
For crisper skins, bake them cut-side down initially. Customize with toppings to suit your taste!
