Ingredients

- 1 cup rolled oats
- 1 cup milk (or dairy-free alternative)
- 1/2 cup shredded carrots
- 1/4 cup Greek yogurt
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1 tablespoon maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Measure all ingredients. Peel and shred fresh carrots if needed.
- In a large bowl, combine rolled oats, milk, shredded carrots, Greek yogurt, raisins, walnuts, maple syrup, cinnamon, vanilla extract, and salt. Stir well to combine.
- Cover the bowl tightly with plastic wrap or a lid and refrigerate overnight (or at least 6–8 hours).
- In the morning, give the oats a good stir. Add a splash of milk if desired.
Notes
Store in an airtight container in the fridge for up to 4 days. Stir before serving and add milk if too thick.
