Description

Enjoy all the cozy spice and sweetness of carrot cake in a quick and healthy breakfast that you can prepare the night before.


Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup milk (or dairy-free alternative)
  • 1/2 cup shredded carrots
  • 1/4 cup Greek yogurt
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Measure all ingredients. Peel and shred fresh carrots if needed.
  2. In a large bowl, combine rolled oats, milk, shredded carrots, Greek yogurt, raisins, walnuts, maple syrup, cinnamon, vanilla extract, and salt. Stir well to combine.
  3. Cover the bowl tightly with plastic wrap or a lid and refrigerate overnight (or at least 6–8 hours).
  4. In the morning, give the oats a good stir. Add a splash of milk if desired.

Notes

Store in an airtight container in the fridge for up to 4 days. Stir before serving and add milk if too thick.
