Description

A delightful, aromatic dish featuring creamy coconut flavor and fluffy texture, perfect as a side or on its own.


Ingredients

  • 1 cup jasmine rice
  • 1 can (400 ml) coconut milk
  • 1 cup water
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 12 tablespoons lime juice (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. This helps remove excess starch, resulting in fluffier rice. Drain well.
  2. Combine the rinsed rice, coconut milk, water, sugar, and salt in a medium saucepan. Stir to combine the ingredients evenly.
  3. Bring the mixture to a boil over medium heat. Once boiling, lower the heat to a simmer and cover the saucepan with a lid.
  4. Cook for about 15-18 minutes or until the rice is tender and all the liquid is absorbed. Once done, remove from heat and let it sit, covered, for an additional 5 minutes. Finally, fluff the rice with a fork and stir in lime juice if desired. Garnish with chopped cilantro before serving.

Notes

Leftover rice can be stored in an airtight container for up to 3 days. Reheat with a splash of water or coconut milk.
