Juicy beef meatballs baked to golden perfection and simmered in a tangy pineapple sauce, served over rice.

- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup onion, finely chopped
- 1 egg
- 1/2 cup pineapple juice
- 1/2 cup vinegar
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 1/4 cup ketchup
- Salt and pepper to taste
- 1 cup bell peppers, chopped
- 1 cup pineapple chunks
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- In a bowl, combine the ground beef, bread crumbs, finely chopped onion, egg, salt, and pepper. Mix gently until just combined, then form into uniform meatballs and place on the baking sheet.
- Bake the meatballs for 20 minutes, until cooked through and lightly browned.
- While the meatballs bake, in a saucepan combine pineapple juice, vinegar, brown sugar, soy sauce, and ketchup. Heat over medium, stirring until the sugar dissolves and the sauce simmers.
- Add bell peppers and pineapple to the sauce, simmer on low for about 5 minutes until peppers soften and the sauce is glossy.
- Remove the meatballs from the oven and add them to the sauce, gently stirring to coat. Simmer together for another 2–3 minutes to absorb the flavors.
- Serve hot over rice.
Notes
For a spicy twist, add chili garlic sauce or Sriracha to the sauce. For gluten-free, use gluten-free breadcrumbs and soy sauce.
