Description

Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups beef or chicken broth
  • Salt and pepper to taste
  • Toppings: cheese, sour cream, and chopped cilantro

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat, breaking it apart as it cooks for even browning. After 5 minutes, add the diced onion and cook until softened, about 3-4 minutes.
  2. Stir in the taco seasoning and cook for 1-2 minutes until fragrant.
  3. Add the black beans, corn, diced tomatoes, and broth to the pot. Stir well and bring to a boil. Reduce the heat and let it simmer for about 20-30 minutes.
  4. Season with salt and pepper to taste. Stir before serving and top with cheese, sour cream, and cilantro.
