- 1 lb ground beef or turkey
- 1 onion, diced
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups beef or chicken broth
- Salt and pepper to taste
- Toppings: cheese, sour cream, and chopped cilantro
Instructions
- In a large pot, brown the ground beef or turkey over medium heat, breaking it apart as it cooks for even browning. After 5 minutes, add the diced onion and cook until softened, about 3-4 minutes.
- Stir in the taco seasoning and cook for 1-2 minutes until fragrant.
- Add the black beans, corn, diced tomatoes, and broth to the pot. Stir well and bring to a boil. Reduce the heat and let it simmer for about 20-30 minutes.
- Season with salt and pepper to taste. Stir before serving and top with cheese, sour cream, and cilantro.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
