- 1 lb ground beef or turkey
- 1 onion, chopped
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups beef or vegetable broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, tortilla chips, avocado
Instructions
- In a large pot over medium heat, brown the ground beef or turkey with the chopped onion until cooked through.
- Drain excess fat from the pot to keep your soup light and healthy.
- Add black beans, kidney beans, corn, diced tomatoes, and taco seasoning to the pot. Stir well to combine.
- Pour in the broth and stir to mix evenly. Bring the soup to a boil, then reduce heat and let simmer for 20-30 minutes. Season with salt and pepper to taste.
- Serve hot with your choice of optional toppings like shredded cheese, sour cream, tortilla chips, or avocado.
Notes
For extra flavor, consider using homemade taco seasoning or adding spices like cumin or smoked paprika. This soup can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
