- 3–4 lbs pot roast
- 2 large onions, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 2 cups French onion soup
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- Heat olive oil in a large Dutch oven over medium-high heat. Season the pot roast with salt and pepper, then sear it until browned on all sides.
- Remove the roast and add sliced onions to the pot. Cook until caramelized, around 15 minutes.
- Add minced garlic and sauté for another minute.
- Return the roast to the pot. Add beef broth, French onion soup, thyme, and bay leaf.
- Bring to a simmer, cover, and bake for 3-4 hours until fork-tender.
- Discard the bay leaf and serve garnished with fresh parsley.
Notes
For thicker sauce, simmer the sauce after removing the roast. Consider adding vegetables like carrots or potatoes for a complete meal.
