Description

Ingredients

  • 34 lbs pot roast
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 cups French onion soup
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat. Season the pot roast with salt and pepper, then sear it until browned on all sides.
  3. Remove the roast and add sliced onions to the pot. Cook until caramelized, around 15 minutes.
  4. Add minced garlic and sauté for another minute.
  5. Return the roast to the pot. Add beef broth, French onion soup, thyme, and bay leaf.
  6. Bring to a simmer, cover, and bake for 3-4 hours until fork-tender.
  7. Discard the bay leaf and serve garnished with fresh parsley.

Notes

For thicker sauce, simmer the sauce after removing the roast. Consider adding vegetables like carrots or potatoes for a complete meal.
