- 1 can (15 oz) pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup vanilla pudding mix (dry)
- 4 large eggs
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan well or line it with parchment.
- Combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil in a large bowl until smooth.
- Add the vanilla pudding mix, then add the eggs one at a time, mixing well after each addition.
- Sift together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt in a separate bowl.
- Add the dry ingredients gradually to the wet mixture, folding gently until just combined.
- Stir in the vanilla extract.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60 to 70 minutes; start checking at 55 minutes with a toothpick.
- Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
Notes
This bread can be enjoyed warm or at room temperature. Serve with butter, cream cheese, or maple syrup.
