Description

A bright and crunchy salad featuring crisp celery, toasted walnuts, and tangy feta, all tied together with a light lemon and olive oil dressing.

Ingredients

Scale
  • 4 stalks of celery, chopped
  • 1 cup walnuts, toasted and chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine chopped celery, toasted and chopped walnuts, and crumbled feta cheese. Make sure the celery is sliced into even pieces so each bite has balanced texture.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until blended. Taste and adjust seasoning; a pinch more lemon brightens the salad.
  3. Pour the dressing over the salad and toss gently to combine. There’s no cooking needed beyond optional toasting of walnuts. Toasting deepens walnut flavor: warm them in a dry skillet over medium heat for 3–5 minutes, stirring, until fragrant.
  4. Garnish with freshly chopped parsley before serving. Serve immediately for the best crunch and fresh flavor.

Notes

Serve the salad chilled or at room temperature. It pairs well with grilled chicken, fish, or a simple grain bowl.
