- 4 stalks of celery, chopped
- 1 cup walnuts, toasted and chopped
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large bowl, combine chopped celery, toasted and chopped walnuts, and crumbled feta cheese. Make sure the celery is sliced into even pieces so each bite has balanced texture.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until blended. Taste and adjust seasoning; a pinch more lemon brightens the salad.
- Pour the dressing over the salad and toss gently to combine. There’s no cooking needed beyond optional toasting of walnuts. Toasting deepens walnut flavor: warm them in a dry skillet over medium heat for 3–5 minutes, stirring, until fragrant.
- Garnish with freshly chopped parsley before serving. Serve immediately for the best crunch and fresh flavor.
