- 1 cup Greek yogurt
- 1 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1 tbsp apple cider vinegar
Instructions
- Preheat the oven to 350°F (175°C). Grease a small loaf pan or line it with parchment paper. Let the eggs and yogurt sit at room temperature.
- In a mixing bowl, whisk together the Greek yogurt, eggs, and apple cider vinegar until smooth.
- In another bowl, stir together the almond flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, folding gently until well combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30–35 minutes, or until the top is golden and a toothpick comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For best texture, let the batter rest for 5 minutes before baking and consider folding in herbs or cheese for variations.
