Ingredients

Scale
  • 2 pieces of flatbread (Naan, Pita, or pre-made flatbread)
  • 1 cup cooked chicken breast, shredded or diced
  • 1/2 cup BBQ sauce (your favorite brand)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1/4 cup canned corn or sliced jalapeños (optional)
  • Cooking spray or olive oil

Instructions

  1. Start by gathering all your ingredients. Slice the red onions thinly so they soften quickly in the air fryer. If your chicken isn’t already shredded, pull it apart with two forks or dice it into bite-sized cubes. Lightly brush or spray both sides of the flatbread with olive oil. This ensures the bottom gets as crispy as the edges.
  2. Place the plain flatbreads into the air fryer basket. Cook at 375°F (190°C) for 2 minutes. This “pre-toast” prevents the sauce from soaking into the bread and making it soft. Once the 2 minutes are up, carefully remove the flatbreads and place them on a clean work surface.
  3. Spread about 2 tablespoons of BBQ sauce evenly over each flatbread, leaving a small border for the crust. Mix the remaining BBQ sauce with the cooked chicken in a small bowl until the meat is well-coated. Sprinkle half of the mozzarella cheese over the sauce, then layer on the BBQ chicken and red onions. Add any optional toppings like corn or jalapeños at this stage. Finish with the remaining cheese to “lock” the toppings in place.
  4. Carefully place the assembled flatbreads back into the air fryer basket. You may need to cook them one at a time depending on the size of your air fryer. Air fry at 375°F (190°C) for 5 to 6 minutes. The pizza is done when the cheese is bubbly and golden brown and the edges of the flatbread are dark and crispy.
  5. Slide the flatbread pizza out of the basket onto a cutting board. Let it sit for 1 to 2 minutes to allow the cheese to set. Sprinkle fresh chopped cilantro over the top for a burst of color and freshness. Slice into triangles or strips and serve immediately while hot.
