Ingredients
Scale
- 1 lb fresh green beans, trimmed
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Olive oil spray
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon Dijon mustard
- Salt to taste
Instructions
- Start by washing the green beans and patting them completely dry with a paper towel; moisture is the enemy of crispiness. Set up a dredging station with three shallow bowls. In the first bowl, place the flour seasoned with salt and pepper. In the second, whisk the eggs. In the third, combine the Panko breadcrumbs, Parmesan cheese, garlic powder, and smoked paprika. Toss the beans in the flour, dip them into the egg wash, and then press them into the Panko mixture until evenly coated.
- Preheat your air fryer to 390°F (200°C). Arrange the coated green beans in the air fryer basket in a single layer, ensuring they do not overlap too much to allow for proper airflow. Lightly spray the beans with olive oil spray to help them brown. Cook for 8 to 10 minutes, shaking the basket halfway through. The fries are ready when the coating is a deep golden brown and the beans are tender-crisp.
- While the green beans cook, whisk together the mayonnaise, minced garlic, lemon juice, and Dijon mustard in a small bowl to create the aioli. Once the beans are finished, transfer them immediately to a serving platter while they are still hot. Serve the crispy fries alongside the garlic aioli for dipping. Garnish with a sprinkle of fresh parsley or extra Parmesan if desired.
