Ingredients
Scale
- 2 large sweet onions (like Vidalia or Walla Walla)
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 2 tablespoons milk
- 2 cups Panko breadcrumbs
- Olive oil spray
Instructions
- Peel the onions and slice them into 1/2-inch thick rounds. Carefully separate the rings, keeping only the large and medium ones for this recipe. Set up three shallow bowls. In the first bowl, whisk together the flour, cornstarch, paprika, garlic powder, salt, and pepper. In the second bowl, beat the eggs with the milk. In the third bowl, place the Panko breadcrumbs.
- Work with one ring at a time to ensure an even coating. First, dredge the onion ring in the flour mixture, shaking off any excess. Dip the floured ring into the egg wash until fully submerged. Finally, press the ring into the Panko breadcrumbs, ensuring the coating sticks to all sides. Place the coated rings on a baking sheet while you finish the rest.
- Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with olive oil spray. Place the onion rings in the basket in a single layer, making sure they do not overlap. Lightly spray the tops of the rings with olive oil. Air fry for 8 to 10 minutes, flipping them halfway through, until they are golden brown and crispy. Repeat in batches if necessary.
- Remove the onion rings from the air fryer and sprinkle with a tiny pinch of extra salt if desired. Serve them immediately while they are hot and at peak crunchiness. Pair them with your favorite dipping sauces like spicy mayo, ranch dressing, or classic organic ketchup.
