Ingredients

Scale
  • 1.5 lbs Fingerling potatoes (halved lengthwise)
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 tablespoon Fresh rosemary (finely chopped)
  • 1 teaspoon Fresh thyme leaves
  • Fresh parsley for garnish

Instructions

  1. Wash the fingerling potatoes thoroughly under cold water to remove any dirt. Pat them completely dry with a kitchen towel or paper towels; moisture is the enemy of crispiness. Slice the potatoes in half lengthwise to create a flat surface that will caramelize against the air fryer basket. In a large mixing bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, rosemary, and thyme. Ensure every potato is evenly coated with the oil and herb mixture.
  2. Preheat your air fryer to 400°F (200°C) for about 3 minutes. Place the seasoned potatoes into the air fryer basket in a single layer. If your air fryer is small, work in batches to avoid overcrowding. Slide the basket in and cook for 18 to 20 minutes. At the halfway mark (around 10 minutes), pull the basket out and give it a good shake to redistribute the potatoes. This ensures they brown evenly on all sides. Cook until the skins are blistered and the insides are fork-tender.
  3. Transfer the hot potatoes to a serving bowl or platter. Sprinkle with a little extra sea salt if desired and garnish generously with chopped fresh parsley for a pop of color and freshness. Serve immediately while they are at their peak crispiness. They go great with a side of garlic aioli or a dollop of sour cream.
