Ingredients

Scale
  • 1 lb large shrimp (peeled and deveined, tails on or off)
  • 1 lb thin asparagus spears (woody ends trimmed)
  • 2 tablespoons olive oil or melted butter
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Salt and black pepper to taste
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Start by washing your asparagus and trimming off the tough, woody bottom ends. Cut the asparagus into 2-inch pieces so they cook evenly with the shrimp. In a large mixing bowl, combine the shrimp and the asparagus pieces. Drizzle the olive oil over the mixture. Add the minced garlic, dried oregano, red pepper flakes, lemon zest, salt, and pepper. Toss everything together until the shrimp and vegetables are thoroughly coated in the seasonings.
  2. Preheat your air fryer to 400°F (200°C) for about 3 minutes. Once hot, place the shrimp and asparagus mixture into the air fryer basket in a single layer. If your basket is small, you may need to cook in two batches to avoid overcrowding. Slide the basket in and cook for 7 to 9 minutes. Halfway through the cooking time, shake the basket or use tongs to toss the ingredients. The shrimp are done when they turn opaque and pink, and the asparagus should be tender with slight charring on the tips.
  3. Remove the basket from the air fryer immediately to prevent overcooking. Transfer the shrimp and asparagus to a serving platter or individual plates. Drizzle the fresh lemon juice over the top while everything is still steaming hot. Garnish with chopped fresh parsley and serve with extra lemon wedges on the side for an extra zing.
