Ingredients
Scale
- 2 medium zucchinis, cut into 1/2-inch thick sticks
- 1/2 cup Panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- 1/4 cup all-purpose flour
- Olive oil spray
Instructions
- Wash the zucchini and pat them completely dry with paper towels. Slice off the ends and cut the zucchini into uniform sticks, about 3 to 4 inches long. Set up three shallow bowls. In the first bowl, place the flour. In the second, beat the eggs. In the third bowl, mix the Panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper until well combined.
- Take a zucchini stick and dredge it lightly in the flour, shaking off any excess. Dip the stick into the beaten egg, ensuring it is fully coated. Finally, press the stick into the Panko and Parmesan mixture, coating all sides evenly. Repeat this process for all zucchini sticks and place them on a clean plate or cutting board.
- Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with olive oil. Place the zucchini sticks in a single layer in the basket, making sure they do not touch or overlap. Spray the tops of the fries lightly with olive oil. Cook for 8 to 10 minutes, flipping halfway through, until they are golden brown and crispy. Serve immediately while hot.
