Description

Soft and fluffy baked coffee cake donuts drizzled with a sweet vanilla glaze, perfect for brunch or snacks.


Ingredients

  • 1 cup almond flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup powdered sugar
  • 23 tablespoons milk (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and thoroughly grease a donut pan.
  2. Whisk together the all-purpose flour, almond flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  3. Mix together the applesauce, eggs, vanilla extract, and buttermilk in a separate bowl.
  4. Add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Fill each donut cavity about 3/4 full with the batter and bake for 10-12 minutes.
  6. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack.
  7. Whisk together the powdered sugar, milk, and vanilla extract for the glaze.
  8. Dip the cooled donuts into the glaze, letting excess drip off, and serve.
