Ingredients

Scale
  • For the Pastry:
  • 1 1/2 cups All-purpose flour
  • 1/2 cup Unsalted butter (cold, cubed)
  • 1 tablespoon Granulated sugar
  • 1/2 teaspoon Salt
  • 4–5 tablespoons Ice water
  • For the Filling:
  • 2 cups Mixed berries (blueberries, raspberries, blackberries)
  • 1/3 cup Nutella (warmed slightly for easy spreading)
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 2 tablespoons Granulated sugar
  • For the Topping:
  • 1 Egg (beaten for egg wash)
  • 1 tablespoon Coarse sanding sugar

Instructions

  1. Step 1: Prepare the Flaky Dough Mix the flour, sugar, and salt in a large bowl. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs with some pea-sized chunks remaining. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Step 2: Prepare the Berry Filling In a medium bowl, gently toss your mixed berries with the lemon juice, cornstarch, and two tablespoons of sugar. The cornstarch is essential here as it thickens the juices that the berries release during baking, preventing a soggy crust. Set the mixture aside while you roll out the dough.
  3. Step 3: Roll and Layer Preheat your oven to 400°F (200°C). On a lightly floured piece of parchment paper, roll the chilled dough disk into a 12-inch circle. It doesn’t need to be a perfect circle. Transfer the parchment and dough onto a baking sheet. Spread the warmed Nutella in the center of the dough, leaving a 2-inch border around the edges.
  4. Step 4: Assemble and Fold Pile the berry mixture directly on top of the Nutella layer. Carefully fold the edges of the dough up and over the fruit, overlapping the folds as you go. The center should remain open. Brush the folded dough edges with the beaten egg wash and sprinkle the coarse sugar over the crust for extra crunch and shine.
  5. Step 5: Bake and Cool Bake the galette for 30 to 35 minutes, or until the crust is a deep golden brown and the berry juices are bubbling in the center. Remove from the oven and let it cool on the baking sheet for at least 15 minutes. This allows the Nutella and fruit filling to set so it doesn’t run when you slice it.
