Ingredients

  • 1/2 cup unsalted butter, softened

  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup fresh strawberries, diced
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, cream cheese, and sugar until smooth and fluffy. Add the egg and vanilla extract, mixing until well combined.
  3. Sift together flour and salt in another bowl. Gradually add this mixture to your butter blend, mixing until just combined.
  4. Fold in the diced strawberries gently.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake for 12-15 minutes until lightly golden.
  6. Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
