Description

A light and flavorful side dish of tender baby carrots infused with fresh garlic and aromatic herbs, perfect for family gatherings and holiday meals.

Ingredients

Scale
  • 1 pound baby carrots
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the Ingredients: Preheat your oven to 400°F (200°C). Rinse the baby carrots under cold water and pat them dry.
  2. Mix in a large bowl, add the baby carrots, olive oil, minced garlic, thyme, rosemary, salt, and pepper. Toss until the carrots are evenly coated.
  3. Spread the seasoned carrots in a single layer on a baking sheet. Roast in the oven for 25-30 minutes, stirring halfway through, until the carrots are tender and slightly caramelized.
  4. Remove the carrots from the oven and place them in a serving dish. Garnish with freshly chopped parsley before serving.

Notes

For additional flavor, consider using fresh herbs instead of dried. Ensure the carrots are spaced out on the baking sheet to promote even roasting.
