Description

Fluffy pancakes swirled with sweet cinnamon, these Easy Fluffy Cinnamon Roll Pancakes combine the best of both worlds for a delightful breakfast treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 2 tablespoons brown sugar
  • Icing for topping (optional)

Instructions

  1. Combine the flour, sugar, baking powder, and salt in a bowl. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until well mixed.
  2. Mix the wet and dry ingredients until just combined, being careful not to overmix; a few lumps are fine.
  3. Mix the brown sugar and ground cinnamon in a small bowl to create the swirl mixture.
  4. Heat a non-stick skillet over medium heat. Pour a 1/4 cup of pancake batter onto the skillet. Immediately sprinkle the cinnamon sugar mixture on top of the batter. Pour a little more batter over the sprinkle to cover it, then cook until bubbles form on the surface, flip, and cook until golden brown.
  5. Serve warm with a drizzle of icing on top, if desired.

Notes

For extra flavor, serve with maple syrup, fresh berries, or sliced bananas. A dollop of whipped cream can turn these pancakes into a fantastic dessert.
