Description

Quick and tantalizing Grilled Shrimp Pineapple Skewers featuring flavorful grilled shrimp and caramelized pineapple, perfect for busy weeknights or weekend gatherings.

Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 pineapple, cut into chunks
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Prepare the Ingredients: Start by peeling and deveining the shrimp. Cut the pineapple into bite-sized chunks. If using wooden skewers, soak them in water for about 30 minutes.
  2. Mix together the olive oil, soy sauce, garlic powder, ginger, and a pinch of salt and pepper. Add the shrimp and toss to coat. Let sit for 15-20 minutes.
  3. Thread the shrimp onto the skewers, alternating with pineapple chunks. Avoid overcrowding.
  4. Preheat the grill to medium-high heat. Place skewers on the grill and cook for 2-3 minutes on each side until the shrimp are opaque. Remove from grill and rest for a few minutes before serving warm.

Notes

Ensure to soak wooden skewers to avoid burning on the grill. Can be served with Jasmine rice or quinoa for a filling meal.
