- 1 lb chicken breast, diced
- 4 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp parsley
- Salt and pepper to taste
- 1 cup spinach or kale
Instructions
- Preparation: Trim and dice the chicken into bite-sized pieces. Peel and dice the carrots, chop the celery and onion, and mince the garlic. Measure the broth and herbs so everything is ready.
- Sautéing the Aromatics: In a large pot, heat a little oil over medium heat. Add the chopped onion and minced garlic and sauté until softened and fragrant, about 3–4 minutes.
- Browning the Chicken: Add the diced chicken to the pot and cook until lightly browned on the outside, about 4–5 minutes.
- Simmering the Soup: Add the diced carrots, celery, and chicken broth to the pot. Stir in the thyme, parsley, salt, and pepper. Bring the soup to a gentle boil, then reduce the heat to low and simmer for about 20 minutes.
- Finishing with Greens: Stir in the spinach or kale and cook just until the greens wilt, about 1–2 minutes. Taste and adjust seasoning. Serve the soup hot.
Notes
Serve with a sprinkle of fresh parsley or lemon for brightness. Can be paired with bread or rice for a heartier meal.
