- 2 pounds beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 carrots, sliced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup Guinness beer
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 cups potatoes, peeled and cubed
- 1 cup frozen peas
Instructions
- Pat the beef dry with paper towels and season with salt and pepper. Prepare the vegetables.
- Heat olive oil in a large pot, add beef in batches, and brown on all sides.
- Add onion and carrots to the same pot, cooking until softened. Stir in garlic and tomato paste.
- Pour in Guinness, scrape the pot, and add broth, thyme, and bay leaves. Bring to a boil, then reduce heat.
- Cover and simmer gently for 2 hours, then add potatoes and simmer for an additional 30 minutes.
- Stir in peas for the last minutes, adjust seasoning, and serve hot.
Notes
Serve with crusty bread or buttered soda bread for a complete meal.
