Description

Delightful mini loaves filled with warm spices and rich molasses, perfect for the holiday season.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 2 large eggs
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your mini loaf pans.
  2. In a bowl, whisk together the all-purpose flour, baking soda, baking powder, ground ginger, ground cinnamon, ground cloves, and salt.
  3. Cream together the softened unsalted butter and brown sugar until smooth and fluffy.
  4. Beat in the molasses and large eggs until fully combined. Gradually add the dry mixture to the wet mixture, alternating with the milk.
  5. Pour the batter into the prepared mini loaf pans, filling each about two-thirds full and bake for 25-30 minutes.
  6. Allow the loaves to cool in the pans for a few minutes before transferring them to a wire rack.

Notes

Serve with whipped cream or cream cheese. Store in an airtight container for up to 3 days.
